  My Days in Lisbon Portugal during Pandemic. Raticanta Mandrencar. I traveled to Portugal in October 2020 and landed in Lisbon. It was a compulsion and not as a choice or travel trip. It was after my wife’s death, in July 2020, that,  I was left alone and my children forced me to leave Goa to be with them either in the USA or in Portugal.  My wife and I had been married for the last 40 years and her sudden cancerous death was a severe blow to all our family members.  It was a pandemic wave throughout the globe and the worst was in Goa-India, where I was based. It was Goa's health system that had collapsed completely and the spike in the death rate was rising. The USA and Europe were going through the Covid-19 shock wave as well. Luckily,  Lisbon in Portugal was perceived as somewhat safer and better, then where I was in Goa and obviously, one of my offspring residing in Lisbon, convinced me to take a flight to Lisbon and that’s how I landed here. Healthy Cooking By Air Fryers...

Tandoori Chicken in the Philips Air Fryer Healthy cooking....one spoon oil for frying... Last November my son gifted Philips Air Fryer to his mother on her birth day. We hardly used it and that too occasionally to fry the fish, fish fillets and fry potato chips. That's all. Rest of time it remained idle on the kitchen platform, next to the microwave. The other day I saw an ad and came to know that it could be used to frying, roasting and baking. I googled and came across various recipes. I instantly decided to cook the Tandoori Chicken.  Got two chicken legs from Delfino's super market at Porvorim. Prepared the marination and left in the fridge overnight. On Friday, put the chicken in the Philips air fryer and cooked the chicken. It took around 18 minutes to cook the perfect tandoori chicken....was tasty and enjoyed. It looked wonderful! I will now explore to cook various recipes and this Sunday will cook Chicken Biryani in the Philips Air Fryer...

After the liberation of Goa  the gates for the Government jobs were wide opened. The vacancies in the  government offices were filled with the officials from Maharastra, Karnataka on  deputation as experienced persons were in short supply or almost not available in Goa.  Every  one in Goa was looking forward to get the Government Jobs. Chovoth...Ganesh Festival in Goa.

. Ganesh Chaturthi, we goans call it Chovoth is the most important festival of Hindus in Goa. It is celebrated in large scale in Goa, Maharastra and Karnataka and in some other parts of the country.  After the Shravan month, On the 4th day Shuklpa Paksha of Bhadrapada, Ganapati is worshipped in most of the Hindu households. Most of the house holds bring the Ganapati idol on the previous day and install the same on the specially decorated seat under matoli. Matoli is a unique form of canopy, decorated with various wild flowers, roots, beetle nuts, coconuts, shoots and mango tree leaves and fruits. It also includes eatable sweets like Modaks, Nevryos etc.  In Goa, majority of the household celebrate Chovoth for one and half days. In some villages it is for five days, seven days and nine days, depending upon the commitment of worshipers. Entire state of Goa turns into festive mood.
